Hey, look, I came back.
I am so anxious waiting to hear from the place I interviewed at. She said 1-2 days but I guess I am not gonna hear anything today. Since its already 5. Bummer, I was really hoping to know something NOW.
I just finished making the coleslaw for the wedding tomorrow. There isn't enough. So unfortunately I am gonna have to send Jon on the way home. He hates that. But I am just too busy. I am, just stopping long enough to finish this up. Plus I'm making dinner.
So the diet is going well. We are almost 4 weeks in and we both can tell a difference. Jon actually has gone down a size in shirts already. And all my clothes I bought a few weeks ago that were too tight are fitting better. But it sucks bc I am having a fat day and my clothes suck and no matter what I put on I am not happy.
Sleep. Sleep sucks. I hate having to use my CPAP. If I do a lot of stuff during the day I crash as soon as I get home. Ugh. I dont know what the doctor is going to end up saying on Monday for my follow up. But I am supposed to return to work on Tuesday. I sure am going to miss being off. I have gotten used to getting up w/ Jon, making him breakfast and lunch. Then having the day to myself to run errands, clean, etc.
Mkay. I need to get off here. Have a great weekend!!

Sleep Apnea and Diet updates
Another week went by and I have been slacking on the post.
I've been sleeping w/ the machine now for a week. It got worse after the first night and I was super frustrated for the 2nd, 3rd and 4th night. But I think I am getting used to it. I am not sleeping thru the night yet. I am trying to get used to it. I usually take the mask off sometime during the night after a few hours. I am also on the RX stimulants and I am supposed to take those twice a day. I still find myself falling asleep after breakfast for about an hour or 2. I need to find something to keep myself awake. Its annoying bc I just wanna watch tv.
Another issue I have is that as bedtime approaches I start to have anxiety. I want so badly to be able to sleep thru the night and feel amazing. I want to have my mask fit. I want to sleep comfortably. No leaking, bubbling mask. No tossing and turning trying to find a comfy spot. Frustrating. But I wont give up.
The diet is going well. It def helps that my momma is doing our grocery shopping. Keeps us on track. I know we can easily just go to the store and get crap foods but it is about accountability also. Its been over 2 weeks and it feels good. I need to start working out tho.

Chicken Broccoli Quiche
Dinner tonight is a quiche I made for J and his momma when she came to see our place a few weeks ago. I found the recipe on, you guessed it, pinterest. It linked me to Cinnamon Spice and Everything Nice. I find that the recipe for the filling (minus the egg mixture) is enough for 2 pie. This time I froze it in the 2nd pie crust since we are going on vacation in the next few days so I know I wont make it again anytime soon. And its really not at all healthy so it not something I plan on making very often. Altho I could make a healthier version I'm sure.
Chicken Broccoli Quiche
2 tbsp butter
1 small onion, diced
3 cloves garlic*
salt/pepper
2 c cooked chicken, cut into bite size pieces
2 c cooked broccoli florets, cut into bite size pieces
1 1/2 c shredded cheese
1/4 c grated parmesan cheese
1 pastry crust
4 eggs
3/4 c heavy cream
3/4 c milk
*notes: I didnt used fresh garlic I used garlic flakes (follow the instructions on package) and I didnt cook my broccoli. And the chicken was the rotisserie chicken sold in most grocery stores.
Preheat oven to 350.
Break down chicken.
Melt butter in small skillet. Add onion and garlic. Saute until tender.
Mix broccoli, chicken, both cheeses, and the onion/garlic together. Season with salt and pepper.
In another bowl whisk eggs, milk and cream until eggs are combined.
Fit broccoli mix into 9 inch deep dish pie dish. This is where you can see there is more the one pie's worth.
Pour egg mixture over, making sure filling and egg mixture are evenly distributed.
Bake for 50-60 minutes until center is set, you can check by inserting a knife and if it comes out clean its done.
Let rest for 10 mins before cutting.
There are a million different ways to do a quiche. We put bacon on top the first time. And we liked it better letting it set for closer to 20 mins or maybe more. But its very filling and plenty for 3-4 people.
Calories for 1 slice: 671
Fat: 44
So I am now off to go run or kill myself....
EDIT: Its not quite as bad as I thought. I forgot I can make 2 pies w/ this...if I think about it I will re-do my numbers and fix it but for now I am going w/ closer to 450 and 30. Phew, thats a little better.

Sloppy Joe Bake
So I found this recipe on Pinterest, and it linked to Heartfelt Homemaking.
I did modify it slightly. I didn't make the sauce from scratch. When I was grocery shopping the Manwich sauce was on sale 5 for $5 so I had a bunch to use.
Sloppy Joe Bake
1 lb lean ground meat
1 can sloppy joe sauce
2 cans crescent rolls
shredded cheese
Not Pictured bc I forgot:
sesame seeds
Also I know there are 2 cans of sauce, I was worried it would be dry but 1 was enough for 1 lb meat. And I dont know if it really needs more then 1lb.
Preheat oven to 425
Brown meat; Drain
Add sauce mix, reduce heat to simmer until sauce thickens.
While meat cooks spray 11x9 baking dish with nonstick spray, and press entire contents of one crescent roll tube on bottom, making sure to close seams.
After meat has simmered approx 10 mins pour or spoon mixture over the crescent rolls.
Sprinkle w/ about 1 c shredded cheese*.
On a flat nonstick surface, I used a baking sheet, roll out the other tube of crescent rolls, pressing the seams, to cover top of meat mixture.
Sprinkle sesame seeds and bake for 15-20 mins.
*Dont forget to add the cheese until after you put the top layer of crescent roll on top and have to carefully remove each section, therefor breaking the seams, stretching out the dough so you can put cheese under it. Oops.
Finished yummyness^.
^Yeah its a little overcooked, lol. I read the directions originally and thought it said 30 mins. Oops.

High in fat BUT most was not saturated. Still need a leaner meat and figure out a better dough.
It turned out super yum and I got the good job kiss/seal of approval from JLove.
